Rich, creamy, and irresistibly smooth, they rank among the most beloved chocolate treats. Making homemade truffles is easy and fun. This simple recipe comes from French pastry chef Cyril Lignac, requires only 4 ingredients, and has the bonus of being egg-free. Choose a high-quality chocolate with a high cocoa content to achieve a deep flavor and perfect texture. Chocolate with 55% cocoa gives a milder taste, while 66% offers a richer, more intense chocolate flavor.&nbsp;<\/p>\n<p><strong>200 ml heavy cream (6.8 fl oz):<\/strong> Heavy cream adds richness and creates a smooth and silky ganache. It must be full fat to ensure the right texture, and a cream with about 30 percent fat works perfectly.<\/p>\n<p><strong>40 g salted or unsalted butter (1.4 oz) :<\/strong> Butter adds shine and helps the truffles stay soft and melt in your mouth. Salted butter enhances the chocolate flavor with a subtle salty note. Unsalted butter is ideal if you prefer a more neutral taste.<\/p>\n<p><strong>Cocoa powder, finely chopped caramelized almonds (praline), or shredded coconut: <\/strong>You can use any coating you like to vary the flavors and textures. Bitter cocoa powder gives a classic, intense finish, praline adds a crunchy touch, and shredded coconut brings a subtle tropical note.<\/p>\n<p>I used melted chocolate to coat the truffles, then rolled them in cocoa powder. If you\u2019re using a chocolate bar, break it into pieces.<\/p>\n<p>2. Place the chocolate in a heatproof bowl and melt it over a double boiler or in the microwave. Let it cool slightly.<\/p>\n<p>3. Pour the cream into another saucepan and bring it to a boil.<\/p>\n<p>4. Gradually add the hot cream to the melted chocolate in three parts, mixing well between each addition to create a smooth emulsion. The ganache should be glossy and uniform.<\/p>\n<p>5. Once the ganache is lukewarm, add the butter and mix thoroughly until smooth.<\/p>\n<p>6. Cover the ganache directly on the surface and let it set in the refrigerator for a few hours, ideally overnight, so it can be shaped.<\/p>\n<p>7. When the ganache is firm, roll it into small walnut-sized balls.&nbsp;<\/p>\n<p>8. Roll the truffles in cocoa powder, finely chopped caramelized almonds (praline), or shredded coconut. For longer storage, place them in the refrigerator in a tightly sealed container. They will keep for up to one month while preserving their flavor and texture.<\/p>\n<p>To enjoy them, take the truffles out of the refrigerator an hour before serving. They will regain all their softness.<\/p>\n<p>You can also freeze the truffles to keep them even longer. First, place them on a tray to firm up, then store them in an airtight container or freezer bag. They will keep for up to 2 months.
