If you are using a pan, grease it and line it with parchment paper.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-the-cake-batter\">The Cake Batter <\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>225 g (8 oz) all-purpose flour<\/li>\n\n\n\n<li>11 g (2 \u00bd teaspoons) baking powder<\/li>\n\n\n\n<li>1 pinch of salt<\/li>\n\n\n\n<li>185 g (6.5 oz) unsalted butter, softened and cut into pieces<\/li>\n\n\n\n<li>185 g (6.5 oz) granulated sugar<\/li>\n\n\n\n<li>3 eggs<\/li>\n\n\n\n<li>90 ml (3 fl oz) whole milk<\/li>\n\n\n\n<li>105 g (3.7 oz) finely chopped walnuts<\/li>\n\n\n\n<li>1 tablespoon lemon zest<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-lemon-syrup\">Lemon Syrup<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>120 g (4.2 oz) granulated sugar <\/li>\n\n\n\n<li>75 g (2.6 oz) unsalted butter <\/li>\n\n\n\n<li>6 tablespoons lemon juice <\/li>\n\n\n\n<li>3 tablespoons water<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-how-to-make-these-lemon-walnut-mini-loaf-cakes\">How to make these lemon walnut mini loaf cakes<\/h2>\n\n\n\n<p><strong>Make the Lemon Syrup<\/strong><\/p>\n\n\n\n<p>In a saucepan, combine the lemon juice, water, sugar and butter over medium heat and bring to a boil. <\/p>\n\n\n\n<p>Reduce the heat and simmer uncovered for 3 minutes. Set aside to cool.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\" id=\"h-cake-batter\">Cake Batter<\/h3>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Preheat the oven to 350\u00b0F (180\u00b0C)<\/span><\/strong><\/p>\n\n\n\n<p>In the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl using a hand mixer, combine the flour, salt, baking powder and butter cut into small pieces. <\/p>\n\n\n\n<p>Mix briefly until you get a sandy, crumbly texture. The mixture should be fine and granular. You can also rub the ingredients together by hand before switching to a simple whisk for the next steps. <\/p>\n\n\n\n<p>Add the sugar and mix. Then add the eggs and milk and mix just enough to bring the batter together.<\/p>\n\n\n\n<p><strong>Important:<\/strong> Do not try to make the batter smooth! Let them sit at room temperature for 20 to 30 minutes before serving, as the cold can make them firm. They will become soft and moist again.<\/li>\n\n\n\n<li><strong>In the freezer:<\/strong> These mini loaf cakes freeze very well. I often freeze them in batches of 2 or 3 so I always have some on hand for last-minute snacks. Just take them out a few hours ahead of time.<\/li>\n<\/ul>\n\n\n\n<p> If you made a full-size loaf, you can freeze it whole by wrapping it well in plastic wrap and placing it in a zip-top bag, or slice it first and wrap the slices individually.
