Melt butter and allow to cool.
Whisk the egg yolks and sugar until pale, then add the melted butter and milk.
Mix well and stir in the sifted flour and baking powder. Whisk well to smooth the batter.
Cover with a dish and let it rest for 1 hour at room temperature.
After an hour's rest, heat the waffle maker.
Beat the egg whites until stiff and fold into the mixture gently from bottom to top with a spatula.
Once the waffle maker is hot, pour a little batter into the center of each cavity using a small ladle.
Spread the batter over the entire surface of the cavity without letting it overflow and close the waffle maker.
Depending on your waffle maker, you can turn them over by hand once one side is golden. Don't over-brown them to keep them soft.
Cook the remaining batter in the same way.
