For a 9 x 4.5 x 3 inch (24–25 x 11 x 7 cm) loaf pan

  • The ingredients are simple budget-friendly, and easy to find:
  • 4 eggs
  • 2 pots of vanilla yogurt 125 g / 4.4 oz each
  • 3 yogurt-pot measures of flour 250 g / 8.8 oz
  • 1 1/2 yogurt-pot measures of sugar 180 g / 6.3 oz
  • 1 yogurt-pot measure of oil 115 g / 4 oz
  • 1 sachet of baking powder 7 g / 0.25 oz

PREPARATION

  • Grease a loaf pan and line it with parchment paper, or simply butter and flour it.
  • Preheat the oven to 180°C (350°F).
  • Pour the yogurt into a mixing bowl and add the sugar. Whisk until smooth and well combined.
  • Add the eggs and mix thoroughly. Then, pour in the oil and whisk again.
  • Sift the flour and baking powder together, or sift them directly into the mixture.
  • Gently fold the dry ingredients into the batter until smooth, being careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 55 minutes to 1 hour 15 minutes (baking time may vary depending on your oven). Avoid opening the oven door before at least 45 minutes of baking.
  • Check doneness by inserting a skewer or the tip of a knife into the center of the cake. It should come out clean.
  • Remove from the oven, unmold onto a wire rack, and let cool completely before serving.
