Tips for Perfect Oven-Roasted Zucchini
Oven cooking vs. air fryer
The oven has the advantage of letting you roast a large batch of zucchini at once. In the air fryer, avoid layering the zucchini in the basket because they will not brown properly. You will need to cook in several batches, so the air fryer is best for small quantities, like one zucchini.
Seasoning
Season the zucchini to your taste and change the flavors each time. You can add one or two grated garlic cloves or garlic powder, oregano, thyme, fresh or dried herbs, freshly ground black pepper, or even sprinkle the slices with grated Parmesan cheese for a richer flavor.
With or without oil
You can roast the zucchini without oil, but I find they are much more flavorful with a little olive oil.

Preparation Steps :
Oven-Roasted zucchini
Preheat the oven to 200°C / 400°F (fan-assisted).
Wash and dry the zucchini, then cut into thin slices (about 0.5 cm / ¼ inch) or small chunks.
Place the zucchini in a large bowl and toss with olive oil, herbes de Provence, dill, salt, and hot pepper. If you prefer less heat, simply replace the chili with a pinch of black pepper.
Mix well to coat evenly.
Spread the zucchinis on a baking tray lined with parchment paper, making sure they do not overlap.
Bake for around 20 minutes, until tender and golden.
Serve sprinkled with extra dill or fresh herbs.

Air-Fryer Roasted Zucchini
Season the zucchini just as you would for the oven version.
Place the slices in parchment paper cups designed for the air fryer and put them in the basket.
Set the air fryer to 200°C (400°F).
Cook for 15 minutes, turning the slices halfway through once the tops are nicely golden, so the bottoms brown as well.
Serve immediately as a side for meat, grilled dishes, or fish.
