Recipe for almond, orange, and chocolate chip muffins that yields very soft muffins. They are nicely flavored with orange and are very easy to make

INGREDIENTS
 

  • 3 medium eggs
  • 100 g granulated sugar 3.5 oz
  • 100 g vegetable oil 3.5 oz
  • 1 pot of yogurt 125g (4.4 oz)
  • 150 g flour 5.3 oz
  • 100 g raw almond powder white almond powder works too (3.5 oz)
  • Zest of one orange
  • 1 packet of baking powder 7g / 0.25 oz
  • 100 g chocolate chips 3.5 oz
  • Some chocolate chips to put on top of the muffins

PREPARATION

  • Preheat the oven to 180°C / 350° F
  • Beat the eggs with sugar until the mixture whitens.
  • Add the oil and yogurt, then mix.
  • Incorporate the sifted flour, almond powder, baking powder, and orange zest, then mix.
  • Add the chocolate chips and mix to incorporate them well into the batter.
  • Put the muffin batter in a piping bag or a freezer bag.
  • You can use a tablespoon or an ice cream scoop to fill them.
  • Fill the muffin cups 3/4 full. Add a few chocolate chips on top.
  • Bake for about 30 minutes, more or less depending on your oven.
  • Check for doneness by inserting a skewer into the center of the muffin. It should come out dry.
