This recipe for fluffy, crispy waffles can be made with just a few ingredients, and will remind you of carnival waffles. Crunchy on the outside and soft on the inside, they’ll be just as popular as the traditional crepes.
I’ve been making this recipe for years because it gives such good results. They are essential at home to bring variety to snack time.
They are quick to prepare, and you can choose whether or not to let the batter rest.
Tips for crisp, fluffy waffles

1. For soft waffles, avoid letting the batter rest. Bake the waffles immediately after preparing the batter.
2. For Belgian waffles that are both fluffy and crispy, you have two options:
a) Add the stiffly beaten egg whites to the batter and leave to rest for 1 hour.
b) Prepare the batter and leave to rest for 1 hour. Just before baking the waffles, beat the egg whites until stiff and fold them gently into the batter. This method is my favorite, as it produces slightly puffier waffles.
Which waffle maker to use?
If you don’t have a waffle maker, you can buy one at a very good price. You can find waffle makers that don’t cost a thing and give great results.
Mine was a primo from the Aldi store that I’d been given as a present. I’ve been using it for almost 10 years, and it was only this year that I changed it because it was scratched. Use a small silicone blade to turn your waffles. I picked up a new Krups brand waffle maker but I haven’t used it yet. I’ll let you know in a future recipe.
How to garnish and serve waffles?
There are many delicious ways to garnish and serve waffles, depending on your mood.
Spread: Top your waffles with Nutella for a chocolatey touch that kids love.
Salted butter caramel and bananas: Add salted butter caramel to your waffles, top with banana slices and whipped cream.
Fresh fruit: Serve your waffles with red fruit and whipped cream.

1. Melt butter and allow to cool.
2. Whisk the egg yolks and sugar until pale, then add the melted butter and milk.
3. Mix well and stir in the sifted flour and baking powder. Whisk well to smooth the batter.
4. Cover with a dish and let it rest for 1 hour at room temperature.
5. After an hour’s rest, heat the waffle maker.
6. Beat the egg whites until stiff and fold into the mixture gently from bottom to top with a spatula.
7. Once the waffle maker is hot, pour a little batter into the center of each cavity using a small ladle.
8. Spread the batter over the entire surface of the cavity without letting it overflow and close the waffle maker.
Depending on your waffle maker, you can turn them over by hand once one side is golden. Don’t over-brown them to keep them soft.
9. Cook the remaining batter in the same way.

How to store waffles?
You can keep the waffles in the fridge for up to a week. Just wrap them well. Reheat for a few seconds in the microwave.
You can also frozen them and keep them for up to 2 months. They should be defrosted before reheating.
