You can drizzle a little olive oil on the bread before toasting. Toast it in a pan or using a professional toaster for best results, especially if you prepare them often.

Prepare poached eggs in advance and store them in the refrigerator. You can also make your homemade guacamole ahead of time and keep it chilled, covered with cling film directly on the surface to prevent oxidation.

Preparing brunch has never been easier. You can create several variations, with different flavors and presentations, to satisfy all your guests.   • 1 and a half avocados
  • 2 slices of grilled wholemeal bread
  • 50 g smoked salmon or trout (1.8 oz)
  • 5 cherry tomatoes
  • 2 tablespoons cream cheese (Kiri, Philadelphia, Madame Loïc, etc.)
  • A pinch of paprika or Espelette pepper

Poached Egg Avocado Toast

  • 1 avocado
  • 2 slices of toasted wholemeal or sandwich bread
  • 2 eggs
  • 1 tablespoon chopped chives
  • About 10 cherry tomatoes
  • A few capers
  • 1 tablespoon poppy or chia seeds

Smoked Turkey Avocado Toast

  • 1 large avocado
  • 2 slices of toasted wholemeal or sandwich bread
  • 2 slices of smoked turkey or ham
  • 2 cherry tomatoes
  • 1 heaped tablespoon toasted multigrain seeds

Tomato and Bell Pepper Avocado Toast

  • 2 slices of toasted wholemeal or sandwich bread
  • 1 avocado
  • 1 tomato
  • 1/2 bell pepper
  • 1/2 jalapeño pepper
  • 1/4 onion
  • 2 teaspoons chopped chives

Halloween Monster Avocado Toast

  • 1 large avocado
  • 2 slices of toasted wholemeal or sandwich bread
  • 2 radishes
  • 4 black olives
  • 2 green olives
  • 1 nori sheet
  • 4 capers
  • 1 gherkin

Note: One large avocado (about 250 g / 8.8 oz) is enough to make two generous toasts.

Tip: Choose avocados with speckles. They should feel slightly soft when pressed gently with a finger.

How to Prepare Avocado Toast?

The Base for the Toasts

Toast the bread or sandwich bread in a toaster or in a pan on both sides.

Toast the seeds in a dry pan until golden and fragrant.

Cut the avocado in half and remove the flesh. Drizzle with the juice of half a lemon.

Roughly mash the avocado with a fork.

Cut a second avocado in half, remove the skin, and slice into thin wedges.

1. Salmon Avocado Toast

To the roughly mashed avocado, add a few diced tomatoes and bell peppers. Season with salt, pepper, and a little lemon juice.

Spread the grilled wholemeal bread slices with a thin layer of cream cheese, then top with the mashed avocado mixture. Arrange a few slices of smoked salmon on top, along with halved cherry tomatoes.

Finish with a drizzle of olive oil or a sprinkle of sesame seeds, and add a pinch of paprika or Espelette pepper for extra flavor.

2. Poached Egg Avocado Toast

Start by poaching the eggs, one egg per toast.

Bring a saucepan of water to a boil and add 2 tablespoons of vinegar.

Crack an egg into a small cup.

When the water reaches a gentle boil, stir it in the center with a spatula to create a whirlpool.

Gently slide the egg from the cup into the whirlpool, letting the cup touch the water.

Fold the edges of the egg over to enclose the yolk and cook for 3 to 4 minutes.

Check the doneness by lifting the egg with a slotted spoon and gently pressing the yolk with your finger. Adjust the cooking time if you prefer the yolk more or less runny. For a semi-runny poached egg, the yolk should feel slightly soft but not too wobbly under light pressure.

Remove the egg from the water and place it in a bowl of very cold water, ideally with ice cubes, to stop the cooking.

Then place the eggs on a paper towel to drain.

Spread the toasts with mashed avocado, and place a poached egg in the center of each.

Cut the egg in half to let the yolk run out. Arrange halved cherry tomatoes and a few capers around it.

Spread your toasted sandwich bread slices with smooth, lemon-flavored avocado puree to prevent the avocado from browning.

Cut a nori sheet or black cheese to create the hair. Make fringes in the nori and place it on top of the toast.

For the eyes, use two black olive slices and place a small piece of caper in the center for the pupils. You can also use radish slices for the eyes, adding a small nori piece and a dot of caper in the center.

Create the mouth with half a green olive cut lengthwise, hollow side up, or use a black olive slice instead.

Make the ears with two walnut halves or two radish halves.

Use a small piece of nori to create the eyebrows and half a pickle for the nose.
