The
entremets
are cakes made with
chocolate mousse
or fruit mousse, with inserts and cookies such as
dacquoise,
cookie madeleine, cookie joconde etc… entremets are served as a dessert at the end of a meal, as a birthday cake wedding or any other occasion. The ‘entremets’ are very light and can be decorated ad infinitum with a
mirror icing
or a
velvet flock
.
Entremets” always has an “S” because in the old days it was a dish served between 2 courses. Over the years, it has replaced dessert, becoming sweeter.
