Easy French Chocolate Truffles
Chocolate truffles are a holiday must-have. Rich, creamy, and irresistibly smooth, they rank among the most beloved chocolate treats. Making homemade truffles is easy and fun. This simple recipe comes from French pastry chef Cyril Lignac, requires only 4 ingredients, and has the bonus of being egg-free. Perfect for dessert platters or as homemade gourmet gifts.
This recipe is different from the truffles I usually make, a more professional version like those you find in chocolateries. Truffles with a thin, crisp chocolate shell that makes all the difference. Try both versions and see which one you prefer.
Every year, I make a variety of Christmas treats, and these truffles are always among the first to disappear. They require few ingredients, are easy to make, and can be stored in the refrigerator for a few weeks. You can also flavor them to your liking with vanilla, orange, coffee, praline, or a hint of rum.
They are perfect for filling a box of assorted cookies and other holiday treats, such as Alsatian bredele, soft gingerbread cake, German almond stars, kipferls, or coconut macaroons.

Ingredients for about 30 Truffles:

300 g (10.5 oz) dark chocolate, 55% or 66%: Dark chocolate is the main ingredient for the truffles. Choose a high-quality chocolate with a high cocoa content to achieve a deep flavor and perfect texture. Chocolate with 55% cocoa gives a milder taste, while 66% offers a richer, more intense chocolate flavor.
200 ml heavy cream (6.8 fl oz): Heavy cream adds richness and creates a smooth and silky ganache. It must be full fat to ensure the right texture, and a cream with about 30 percent fat works perfectly.
40 g salted or unsalted butter (1.4 oz) : Butter adds shine and helps the truffles stay soft and melt in your mouth. Salted butter enhances the chocolate flavor with a subtle salty note. Unsalted butter is ideal if you prefer a more neutral taste.
Cocoa powder, finely chopped caramelized almonds (praline), or shredded coconut: You can use any coating you like to vary the flavors and textures. Bitter cocoa powder gives a classic, intense finish, praline adds a crunchy touch, and shredded coconut brings a subtle tropical note.
I used melted chocolate to coat the truffles, then rolled them in cocoa powder. I love that thin, crisp chocolate shell, but it’s completely optional. In high-end chocolate shops, truffles are often made this way. You can see the method in my professional truffle recipe video.

How to Make Homemade Chocolate Truffles
1. If you’re using a chocolate bar, break it into pieces.
2. Place the chocolate in a heatproof bowl and melt it over a double boiler or in the microwave. Let it cool slightly.
3. Pour the cream into another saucepan and bring it to a boil.
4. Gradually add the hot cream to the melted chocolate in three parts, mixing well between each addition to create a smooth emulsion. The ganache should be glossy and uniform.
5. Once the ganache is lukewarm, add the butter and mix thoroughly until smooth.
6. Cover the ganache directly on the surface and let it set in the refrigerator for a few hours, ideally overnight, so it can be shaped.
7. When the ganache is firm, roll it into small walnut-sized balls.
8. Roll the truffles in cocoa powder, finely chopped caramelized almonds (praline), or shredded coconut. You can vary the coatings for even more indulgence!

9. Package the truffles in small bags or boxes. They make a beautiful homemade gift for your family and friends at Christmas.
I gave a large box to a family, and it was a real hit.
Note : If you want to achieve a thin, crisp chocolate shell, put a little melted chocolate in the palm of your hand and coat each truffle before rolling it in cocoa powder. You can wear gloves if you prefer. This method creates a very delicate layer of chocolate.

How to Store Homemade Chocolate Truffles
Homemade chocolate truffles can be kept at room temperature for 7 to 10 days, in an airtight container, away from heat and humidity. For longer storage, place them in the refrigerator in a tightly sealed container. They will keep for up to one month while preserving their flavor and texture.
To enjoy them, take the truffles out of the refrigerator an hour before serving. They will regain all their softness.
You can also freeze the truffles to keep them even longer. First, place them on a tray to firm up, then store them in an airtight container or freezer bag. They will keep for up to 2 months. To enjoy, let them thaw in the refrigerator the day before so they regain all their creamy texture.
