Mascarpone is an Italian cheese that is particularly popular in tiramisu. It is unctuous and rather fatty which gives texture to creams like the mascarpone chantilly .

Mascarpone is an Italian cheese from the Piedmont-Lombardy region.

The ingredient of choice in Italian cuisine, it is used in many recipes, particularly desserts such as the famous tiramisu.

It’s a full-fat, fresh cheese made from creamy cow’s milk.

The production technique is simple: simply heat the cream to 100°C and add lemon juice or white vinegar. Once curdled, the paste is left to drain for one or more days through muslin in the refrigerator. Then it is potted. (source wikipedia )
