I love tiramisu ! It’s the dessert I make most often, and everyone loves it! Whenever a new recipe comes along, I can’t wait to try it. This week, I tried a berry tiramisu with fresh raspberries and a few strawberries.
It’s a delicious no-bake tiramisu, perfect for a quick and delightful dessert that will please both young and old alike!
To make red fruit tiramisu, you’ll need a few basic ingredients, including Savoiardi cookies, mascarpone cream, eggs, sugar, red fruit juice and, of course, fresh red fruit.
In Cyril Lignac’s tiramisu, stiffly beaten egg whites are replaced by stiffly beaten cream. The tiramisu is light and creamy. Although this recipe is delicious, I prefer tiramisu with egg whites beaten until stiff.
They give it a peerless lightness. You can see my favorite recipe here: traditional tiramisu.
Some time ago I tried Christophe Felder’s strawberry tiramisu from his pastry book which I haven’t had time to publish yet. Christophe Felder’s recipe is almost the same as the traditional tiramisu recipe. However, I prefer my own recipe that I’ve been making for years, which results in a cream that crackles under the spoon.
I recommend trying both and keeping the tiramisu recipe that satisfies your sweet tooth.
Cyril Lignac doesn’t dust his tiramisu with cocoa powder, so you can follow the chef’s example. It’s all up to your taste. I like to sprinkle it with cocoa powder; it pairs very well with the whole dessert.
You can use my easy recipe for ladyfingers or opt for store-bought ones.
Preparation steps
NB: You can find details of the ingredients on the recipe card below, which you can print out.
Whip the cold heavy cream until it forms firm peaks. Set aside in the refrigerator.
Whisk the egg yolks with the sugar until the mixture becomes creamy and forms ribbons.
Add the mascarpone and whisk well until the mixture becomes thick and creamy.
Gently fold the whipped cream into the mascarpone mixture using a spatula until well combined.
Assemble the Tiramisu:
Dip half of the ladyfingers into the coffee and place them at the bottom of the serving glasses or dish.
Add half of the sliced strawberries on top of the ladyfingers. Cover with a layer of mascarpone cream.
Add another layer of coffee-soaked ladyfingers and the remaining strawberries. You can also add raspberries if desired, using fewer on top as decoration.
Cover with the remaining mascarpone cream and decorate with raspberries. You can cover the entire surface with raspberries if you like.
Let the tiramisu set in the refrigerator for 1 to 2 hours. You can prepare it 24 hours in advance; it will only get better.
Sprinkle with powdered sugar and lemon zest before serving for added flavor and presentation.
